RICOTTA

Ricotta is not sold in these wicker containers, called cavagne, any more but it was being displayed in them at Saturday's farmers' market in Modica Bassa.  I asked the stallholder if I could buy some in the container and she agreed  [I wanted the cavagna because it is bigger than others I have hanging in the kitchen], throwing  a mound of baked ricotta into the bag too.

I wish we could get fresh ricotta as you can. It must be heavenly. What's your favorite way to eat ricotta fresca?

p.s. I followed the links to more ricotta recipes and I'm now famished.

I've certainly never seen ricotta sold this way before.

Actually, Lakeviewer, I can't eat it when it's hot and fresh as I'm a bit lactose intolerant. I can, however, eat it cold in things! Hi, jams. Go on, drool! Alas, I don't have time to do that this week, WW. I gave the ricotta to Rosa. Hi, Ellee. It used to be pressed into these containers so that mice couldn't get at it and also it pressed out any excess liquid. They used to put a metal lid on the bottom.

I didn't know that ricotta used to be sold that way. It seems a shame that the tradition has stopped.

Hi, Cherie. Yes, a shame but plastic containers are more practical these days and conform to hygiene rules.

It looks delicious! It is also still common to find fresh ricotta in rural farms in Sicily :)

Hi, Alfredo. Yes, my friends make it, too.
